Adobo Chicken Tostadas

Ingredients

Chicken Adobo
  • 3 tablespoons extra-virgin olive oil
  • 1 cup yellow onion, finely chopped
  • 1 tablespoon garlic, minced
  • 1 pound ground chicken
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 3 teaspoons minced chipotles in adobo sauce + 2 teaspoons sauce
  • 1 tablespoon tomato paste or clean ketchup
  • 1/4 cup chicken broth
  • salt and pepper to taste
  • Toppings: sour cream, shredded cheese, and lettuce for serving
Pico de Gallo
  • 2 tablespoons lime juice (juice of one lime)
  • 1/4 cup parsley, finely chopped (use fresh, not dried)
  • 1/4 of a jalapeno, finely chopped
  • 1/2 cup yellow onion, finely chopped
Crispy Baked Tostadas
  • 4 corn tortillas
  • 2 tablespoons extra virgin olive oil

Instructions

Chicken Adobo
  1. In a large skillet, heat oil over medium-high heat. Add 1 cup of onion, garlic, and a pinch of salt. Cook, stirring occasionally, until softened and just beginning to brown, 3 to 4 minutes.
  2. Add chicken, cumin, coriander, salt, and pepper. Cook until crumbly, 5 to 6 minutes.
  3. Stir in tomato paste or ketchup, chipotle peppers and sauce, and broth.
  4. Bring to a simmer, reduce heat and cook until most of the liquid has evaporated, about 1 minute. Keep warm.
Pico de Gallo
  1. Stir together all ingredients. Season with salt and pepper.
Crispy Baked Tostadas
  1. Heat oven to 400°F.
  2. Brush corn tortillas with olive oil.
  3. Place tortillas in a single layer on a baking sheet.
  4. Bake for 5 minutes. Flip tortillas and rotate the baking sheet. Bake 3 to 6 minutes longer until tortillas are crispy and light brown.
Assembly
  1. Place a Cripsy Baked Tostada on the plate.
  2. Top Cripsy Baked Tostada with shredded lettuce, Adobo Chicken, Pico de Gallo, cheese, and sour cream.
  3. Enjoy!
